Rainbow Crêpe Cake! 🌈

Ingredients
- 4 eggs
- 1 ⅓ cups milk
- 2 tbsp butter, melted
- 1 tsp vanilla extract
- 1 cup flour
- 2 tbsp sugar
- 1 cup raspberries
- 2 cups heavy whipping cream
- ¼ cup sugar
- Food coloring in pastel shades
- Sprinkles
Directions
- In a small saucepan, combine the raspberries and sugar, and simmer over low heat until the berries have dissolved into a puree. Allow the mixture to cool and pass it through a strainer, to remove any seeds.
- Combine the cooled raspberry puree with the whipping cream and whip until medium-stiff peaks form. Set aside.
- Whisk together the eggs, milk, butter and vanilla until totally combined. Then, add in the flour and sugar.
- Divide the batter evenly into the amount of colors you have, and dye the divided batter using a drop or two of food coloring in each.
- Set a non-stick pan over medium heat and pour a ¼ cup of batter into the pan. Cook the crepe for about a minute per side.
- Layer the crepes and raspberry whipped cream on a serving platter, starting and ending with a crepe.
- Top with remaining raspberry whipped cream and sprinkles.
